4 lbs of fish fillets
1 cup Salt
4 cups of water
4 cups of with vinegar
1 cup of white sugar
1/2 cup of brown sugar
5 tbsp. pickling spices
1 med.onion sliced thin
Cut the fillets inf 1/2 inch strips
in a large container mix the salt,water add fish cover container.
Place fish in fridge for two days or so maybe two more longer wont hurt.
Drain the fillets of the water and salt, then cover the fillets with white vinegar for one day.
For the brine, add two cups of white vinegar in a sauce pan, add all the sugar and pickling spice.
Bring to a boil..Place in the fridge to untill cool.
Find some clean jars, place the fillets in the jars layering your onion between the fillets ect.
Pour brine into over your layered fish in the the jars , cover the jars, put into fridge wait for two weeks. And enjoy!!
